Whenever my family and I are home for a long weekend, I try and make up something special for breakfast.
It isn’t every day that I get to spend an hour or more preparing something before the rest of them even climb out of bed. I really do love being the cook and waking them up with something yummy to eat. I remember when my mom used to do it for us too. It wasn’t often because she worked a full-time job all through my childhood, but when she did, it was so special. When I found this recipe for smoked sausage and potato casserole on Just A Pinch, I knew I wanted to try it out.
The ooey gooey cheese blend along with our favorite food groups, meat, and potatoes, I just knew that my family would love it. I made it on a Saturday morning the first time before my kids had to head out for all day soccer tournaments.
They each devoured their plates and then we loaded up in the van and headed out. I think it was mid-afternoon before either one of them even mentioned anything about being hungry.
So, not only was it tasty, it was super filling as well. This is a recipe that’s going to stick around a while.
This is also a nice meal to make when you are having brunch or breakfast guests. It goes together quickly to make it nice for those last minute drop-ins. It’s so filling you can feed a really big group. That’s especially true if you add some bacon, toast, muffins, or any other breakfast foods to the table. For our family of four, this fed us all and there was still plenty left over. They reheated very nicely in the microwave later on that evening and tasted just as good. You can use canned potatoes if you want to save more time.
