These Dessert Bars are a Breath of Fresh Air!
As the weather heats up, many of us are looking for cool and refreshing treats we can use to take the edge off of those sultry summer days and nights. Ice cream is one of our first choices, of course, but we’re always on the lookout for other cool and tasty desserts and snacks that will sweeten up our day and cool us off a bit. We found both of these things with these luscious pineapple crumble bars, which you bake and then place in the fridge until they’re ice-cold. That will certainly cool you off!
If you like lemon bars then you’ll love these pineapple bars, because they have a similar custard-like filling. They also have an oatmeal streusel mix for the crust that has a slightly nutty flavor and perfectly balances the sweet and somewhat tangy pineapple. Plus, these bars will keep in the fridge for a couple of days, so you can make them ahead if you need to. We also like that you can use either fresh or canned pineapple. Delicious!
