Ingredients:

  • 1 lb shrimp
  • 1–4 sweet potatoes
  • Paleo seasoning
  • Tomatoes
  • Avocado
  • Spinach

Directions:

  1. Preheat oven to 400F.
  2. Make holes around the sweet potato with a fork.
  3. Place the sweet potato on the baking tray.
  4. Depending on the size of the sweet potato, bake for 50-60 minutes. It should be supple.
  5. Remove it and keep it in an airtight container if you’re storing it.
  6. After washing the shrimp, season them with 1 tablespoon paleo seasoning blend.
  7. A baking sheet should be sprayed or lined.
  8. Add shrimp.
  9. Cook for 15 minutes. Avocado, red pepper flakes, sautéed spinach, and tomatoes are served on top.
