Potato Junk Casserole

When my husband and I first moved in together, I was embarrassed a bit of my cooking skills, or lack there of. I really didn’t know how to make much of anything. Not that my mom never tried to teach me, because bless her heart she tried at every turn. I just never really had much interest in it. That was, until I realized that I was going to have to feed a family. That first couple of weeks I kind of faked my cooking abilities by whipping up some boxed dinners and doing frozen pizza, but soon my new husband was getting tired of that, and catching on to what I was doing.
So, one weekend when he was going to be gone golfing with his buddies, I went over to my mom’s for a crash course in cooking. One of the dishes that she said I couldn’t go wrong with were these potatoes. It was without a doubt the easiest thing that we made that day.
The dish was very similar to this one from I Wash You Dry. It was also the first recipe that I did when the hubby got home. He was more than impressed with these, and now he requests them all the time. It’s so simple, I don’t mind making them just about whenever he asks.

This is one of those casseroles that I will toss together and stick in the freezer for my husband for the days that I know I’ll be working late and I won’t be home for dinner. He’s done it so much, that he knows the drill. The corn flakes have to be put on only after it comes out of the freezer. It takes a little bit longer to cook, but that’s okay because all of the work is already done. Check out what they are saying about this recipe over at I Wash You Dry:

There are a lot of names for this hashbrown casserole, but the taste stays amazing no matter what you call it!
