Dark Mocha Crinkle Cookies

Instructions:

  1. Preheat the oven to 350*
  2. In a medium bowl, combine the butter, brown sugar, granulated sugar
  3. Beat until well combined and fluffy
  4. Beat in the eggs and the vanilla until it is combined thoroughly
  5. Adding a little at a time, gradually mix in the dry ingredients
  6. Using a small scoop, scoop out one tablespoon of dough and roll it into a ball
  7. Roll the ball into sugar and set it on a tray lined with parchment paper
  8. Continue until all dough is used
  9. Using your thumb, make an indent into the center of each ball
  10. Bake for 8 to 10 minutes
  11. Meantime, make a ganache using ½ cup heavy whipping cream and 1 cup chocolate chips.
  12. Microwave at 30-second intervals until chocolate is melted and you stir to combine thoroughly
  13. When cookies are done baking, remove them from the oven and fill each center with a spoonful of ganache
  14. Allow to harden before serving with your favorite cup of coffee.
