Instructions:
- Preheat the oven to 350° and grease a 9″ round pan or 9×13 rectangular pan.
- In a bowl, mix all of the dry ingredients and mix the eggs, vanilla, and crushed pineapple with juice until well combined.
- Pour the batter into the pan and bake for 35 to 40 minutes.
- To make the frosting, beat the whipping cream in a small bowl until fluffy and set aside.
- Mix the cream cheese, sugar, salt, and vanilla in a large bowl until smooth and creamy.
- Stir in the whipped cream and mix to combine.
- Once the cake is cooled, frost it and top it with anything you desire, I used toasted coconut.
