Instructions:
- In a small bowl, combine red onions, green onions, jalapeños, tomatoes, and salt to taste. sit aside.
- In a large skillet, brown the meat, dumping off the grease.
- Add taco seasoning and stir.
- In a medium saucepan, boil the heavy cream and butter, stirring, until thickened.
- Removing from heat and adding 2 cups of cheese.
- Adding Cajun seasoning and keeping warm.
- In a 9″ x 13″ casserole, layer 4 tortillas (cut to fit in the bottom of casserole), ground beef, cheese, and tomato mixture.
- Repeat up to 3 layers with cheese sauce on top.
- Add another cup of cheese on top of a whole casserole.
- Place in a covered 400° oven for 20 minutes, then remove and let cool. Each serving is garnished with sour cream and green onions.
