Ingredients:
- 1 onion, grated
- 12 c fresh chopped parsley
- 2/3 c parmesan cheese
- 1/3 c Italian rusk
- 1 egg
- 2 tsp marinara sauce + 1/3 cup
- 3 cloves minced garlic
- Pinch of crushed red pepper
- Salt and pepper to taste
- 1 pack ground beef (1.5-2 pounds)
- 16 cubes mozzarella cheese (1/2 inch cubes)
Preparation:
- Place the oven rack in the lower third of the oven.
- Heat the oven to 400 degrees.
- In a large bowl, combine onion, parsley, parmesan cheese, bread crumbs, eggs, marinara, garlic, red pepper flakes, salt, and pepper.
- Once mixed, add the beef and mix with your hands.
- Shape the meat mixture into 16 balls.
- Make a hole in the center of each meatball and place a cube of mozzarella cheese inside.
- Fix the meatballs until the cheese is completely hidden.
- Pour 1/3 cup of the marinara into the bottom of a baking dish.
- Place the meatballs inside and drizzle with a little extra virgin olive oil.
- Bake for 15 minutes until fully cooked.
