Instructions:

  1. Prepare the oven and preheat to 200 degrees C or 400 degrees F. On a 13-inch baking sheet with a rim, add bell peppers, zucchini, broccoli, carrots, and red onion.
  2. Drizzle olive oil on top of the mixed veggies.
  3. Sprinkle Italian seasoning, pepper, garlic, and salt.
  4. Toss everything until well blended.
  5. Move the mixed veggies inside the preheated oven and roast for about 15 minutes.
  6. Remove from the oven, then add the tomatoes and toss until well mixed.
  7. Put it back inside the oven and roast for another 10 minutes.
  8. Remove from the oven and drizzle lemon on top of the mixed veggies.
  9. Serve right away and enjoy!
